- Thistle Restaurant and Bar creates a true Oregon dining experience by honoring the region’s bounty. Their ever-changing chalkboard menu is created around the Willamette Valley farmers and ranchers. The Chef involves himself in the farming process from choosing heirloom seeds to inspiring farmers to raise heritage breed animals to be part of developing sustainable agriculture. The bar is reminiscent of the pre-prohibition era when the cocktail was king where recipes range from classic to inspired. Patrick the mixologist is terrific at blending your perfect cocktail. - Pura Vida Cocina is a relaxed eatery offering an array of classic Latin American dishes from tacos to ceviche. My two favorite items are the Aquacate Frito which is fried avocado, mixed greens, chipotle aioli, and cotija cheese and the specialty Salmon Ceviche served with mango and homemade chips. - La Rambla on Third is the ideal culinary destination for blending the freshness of the Northwest with the exciting cuisine of Spain. The culinary team works with organic and sustainable suppliers whenever possible creating unique dishes, like traditional paella and various tapas. Patatas Bravas made of fried Yukon gold potatoes, Calabrian chili butter, sunny-side-up egg and aioli along with Piquillo Peppers stuffed with saffron rice, slow-roasted chicken, Idiazabal cream sauce and hazelnut picada are always part of my order.
